The Mafaldine, a format of typical pasta from Gragnano, Italy, have been reproposed by Pastai di Gragnanesi. These pasta were dedicated to Mafalda di Savoia when she was born in 1902, which is why they were given the name Mafaldine or Reginette, although this format had existed for much longer. Mafaldine is a short, curled pasta shape, which is the broken version of the long Mafaldina, making it excellent for "mixed pasta."

Mafaldine Pastai Gragnanesi I.G.P. (Protected Geographical Indication) are a special long cut shaped like a ribbon, enriched by precious curls. The origin of this shape seems to refer to a pretty girl named "Mafalda" with curly hair, who inspired the pasta maker, or to the princess Mafalda di Savoia. This cut is originated from Naples, Italy.

The Cooperativa Pastai Gragnanesi IGP (Protected Geographical Indication) factory has a vertical (not horizontal as the modern one) development, which is an architectural anomaly that supports the entrenchment of the pasta in the tradition of Gragnano pasta. This architectural feature helps preserve the old and tried processing methods and the manual skill to ensure better quality pasta.
